This is excellent! I would need to find or make some passion fruit syrup. I have read plenty of good recipes, but almost all of the passion fruit juice and concentrate I can find has very little actual passion fruit. It seems they like to mix it with other fruit.

Just made a new batch of grenadine today, that was needed. I´ll give you another reason to use your homemade grenadine if you havn`t already, make a Trader Vic`s Portlight. One of my favorite drinks with grenadine.

PORTLIGHT (From Grog Log)

1 oz fresh lemon juice
0.5 oz passion fruit syrup
3 tsp grenadine
1 oz Bourbon

Blend with 1 cup crushed ice for 5 sek and pour into collins glass or nautical tumbler.Add more crushed ice to fill.

Cheers,

T

Thanks, Tiare.
The Scofflaw has gone into regular rotation at my house. I love a chance to use my own grenadine.

Thanks Randy! I hope you do. And my discovery of celery bitters (Scrappy's, bought at Boston Shaker) got me thinking about what the heck to do with it. I'm finding that in spare amounts, it provides a bright note to several cocktails. Gin and tequila seem to have an affinity to it in very small amounts, otherwise it tends to be rather vegetal...the exception would be in a vodka or gin bloody.

All that said, I celebrate the historic Scofflaw! Along with the Ward 8 it's one of the classic Boston cocktails.

Fantastic! You are right, versions with green Chartreuse appear sometimes in recipes even though it's not hisorically accurate. Nevertheless, I love when a classic inspires variations like this. Your Bandido varies the spirit and the souring agent. Celery bitters too! This is quite a recipe. I can't wait to try it.

I've seen some Scofflaw variants with green Chartreuse instead of grenadine, and it's an interesting bent. I branched out south of the border to come up with a green Mexican version of the Scofflaw, let's call it a Bandido:

2 oz tequila reposado
.5 oz green Chartreuse
.5 oz dry vermouth
.5 oz fresh lime juice
1 dash celery bitters

Build in mixing glass over ice, strain into chilled coupe, add lime twist.
