Pure food-grade acacia senegal (gum arabic) sold as a tummy fiber digestion aid. We use this to make Gum Syrup (sirop de gomme)—true cocktail syrup. When you make simple syrup, you are making the same thing without the gum. Adding some of this will add a luxurious, thicker mouthfeel while stabilizing the sugar to prevent crystalization of high-ratio “rock candy” sugar syrup.
